I’m always amazed at how just a few ingredients, when paired with different supporting players, can completely transform into entirely new meals. Lately, I’ve been loving this combo: feta cheese, arugula, and Roma tomatoes. Add in a few pantry staples or fridge basics, and you suddenly have a variety of dishes that feel anything but repetitive.

Take yesterday, for example. I tossed those three favorites on a toasted pita, added a bit of garlic oil and mozzarella, and popped it in the oven for an easy, crispy pizza. The feta gave it that tangy bite, the arugula added a peppery crunch, and the tomatoes roasted just enough to bring out their sweetness.

This morning, I folded them into a protein-packed breakfast sandwich, eggs whipped with cottage cheese for extra creaminess, layered with fresh tomato slices and a sprinkle of feta. All sandwiched between warm pita. It was filling, flavorful, and surprisingly fancy for something I pulled together in under 10 minutes.

And now, for dinner? I turned that same trio into a vibrant pasta dish. A bit of olive oil, some garlic, a handful of pasta, and suddenly those ingredients came together in a completely different way. Warm, comforting, and packed with flavor.
It’s a good reminder: you don’t need a ton of ingredients to cook creatively. Sometimes, the magic is already in your fridge, you just have to mix it up.
